Unmasking the Ownership Behind Waldo’s Chicken & Beer

Post date |

Waldo’s Chicken & Beer, a growing fast casual chicken restaurant, is scheduled to open its second Arkansas location on Feb. 21, at 6 Bass Pro Drive in Little Rock (in the former David’s Burgers location). The restaurant is currently hiring and training 30-40 new employees for all positions in time for the grand opening.

The Keet family’s JTJ Restaurants, LLC, is the group behind the restaurant. JTJ Restaurants opened the first Arkansas Waldo’s location in North Little Rock in March last year. The Bass Pro Drive location will be the third Waldo’s owned by the Keet Family. In 2020, the Keets, along with partners Mike Pierce Jr. , Mark Waldo, Dino Nithianandan and Fresh Hospitality, opened the first Waldo’s outside of Nashville in Tulsa, Oklahoma. JTJ Restaurants also owns eight Taziki’s Mediterranean Café locations in Arkansas, as well as Petit & Keet, and Cypress Social.

An additional Little Rock Waldo’s location has also been announced for the Breckenridge Shopping Center redevelopment.

The new Bass Pro Drive location seats up to 74 for indoor dining, including a full-service bar. Additional seating is available on a private outdoor patio. Waldo’s is currently hiring to fill management, all front and back-of-house positions and seeking to employ 30-40 additional staff members. Employment applications can be filled out in person at the new Waldo’s location, submitted online through the main Waldo’s website, or by calling General Manager Joe Faucett at 501-940-4552.

Waldo’s Chicken & Beer has quickly become one of the hottest new fast-casual dining chains in recent years. With its craveable fried chicken, cold craft brews, and warm Southern hospitality, it’s no wonder this brand has taken off. But behind the red-and-white striped mascot and clever name lies a lesser-known ownership story. So who exactly is running the show at Waldo’s? Let’s take a closer look at the key players and corporate structure powering this ascending restaurant empire.

The Birth of a Brand

Waldo’s Chicken & Beer was founded in 2019 by hospitality veteran Mark Waldo in Nashville, TN. Waldo drew upon his Birmingham AL upbringing in the family restaurant business to create an approachable eatery focused on high-quality fried and fire-roasted chicken. The idea was to craft an appealing menu from scratch each day using top-notch ingredients. Waldo insisted on tenders made from whole muscle chicken rather than injected processed meat. This founding commitment to quality made Waldo’s stand out from typical fast food chains.

The original Germantown neighborhood location was a hit, filling a gap in the market for a high-end but laidback chicken joint. Waldo’s quickly built a reputation for juicy chicken cooked to crispy perfection, cheddar biscuits with a 45-year legacy, and house-made dipping sauces like honey mustard and roasted jalapeño ranch. The signature Waldo’s House Beer crafted by renowned Nashville brewer TailGate only added to the brand’s allure. Soon customers were flocking for the food as much as the fun, welcoming vibe.

The Corporate Backbone

Even though Waldo started it all, the company that runs Waldo’s was very important in turning it from a single restaurant to a brand that can grow. Meet Buttermilk Hospitality – the corporate parent enabling Waldo’s expansion.

Buttermilk Hospitality is a restaurant group with its main office in Nashville that focuses on promoting new food ideas. Their hands-on approach gives Waldo’s the tools and knowledge it needs to succeed. Buttermilk’s long history in hospitality and success with other high-end casual dining chains, such as Taziki’s Mediterranean Cafe, gave Waldo’s a strong base.

Buttermilk’s guiding vision for Waldo’s centered around anchoring the brand to key values like scratch cooking and hospitality. They also emphasized building customer loyalty by enabling local restaurant teams to cultivate community ties. Buttermilk Hospitality may operate behind the scenes, but their strategic leadership plays a fundamental role in shaping Waldo’s future.

The Brains Behind the Business

Waldo may be the fun public face, but Buttermilk Hospitality’s executives make the magic happen.

CEO Tom Keet and his cohort of hospitality veterans pilot Waldo’s steady growth from corporate headquarters. Their industry savvy provides vital direction for the brand.

On a local level, General Managers like Olivia Bane and Tim Stanton in Franklin, TN run the business and build strong relationships with both staff and customers. Their approach at the local level creates the friendly atmosphere that customers love.

Because these leaders have a lot of experience, Waldo’s can find a balance between being big and being connected to the community. Waldo’s has been able to keep its signature charm while growing by combining high-level strategy with a focus on people.

Strategic Steps Toward Expansion

Buttermilk Hospitality’s measured franchise strategy has facilitated Waldo’s controlled growth. Unlike many chains, Waldo’s locations are primarily company-owned, not franchised.

By retaining ownership over restaurants, Buttermilk can better regulate brand consistency and quality standards across geographies. Local franchising partnerships are selectively considered to aid entry into certain new regions when strategically advantageous.

This expansion model has fueled Waldo’s rise across the South and Midwest. There are currently over a dozen locations across seven states, with more openings slated. Focusing first on finding footing regionally before going national or global has helped plant Waldo’s roots.

What Does the Future Hold?

Waldo’s and Buttermilk’s future looks bright, with strategic growth plans in place to build on their initial success. Some possible next moves include:

  • Continuing expansion into new cities and states, bringing their distinctive Southern vibe to untapped markets

  • Menu innovation like new sauces, side dishes, and rotational specials to keep things fresh

  • Sustainability initiatives around sourcing, waste reduction, and energy efficiency to operate responsibly

  • Customer experience enhancements through updated tech, improved ordering, and personalized loyalty programs

With Buttermilk Hospitality’s robust operations and expertise supporting the brand, Waldo’s has ample runway to grow into a staple chicken chain across America and beyond.

The Secret’s Out

The key players, corporate structure, and growth strategy behind Waldo’s Chicken & Beer shed light on this rising restaurant enterprise. While Waldo lends a friendly face, it’s the savvy leadership of Buttermilk Hospitality driving strategic decisions. Their vision has fueled Waldo’s ascent, but maintaining the brand’s quality and essence will be vital as expansion continues. The corporate brains trust and local restaurant teams working in harmony have unlocked this recipe for success. So next time you sink your teeth into Waldo’s juicy fried chicken, remember the magic blend of corporate and community breathing life into this brand.
